The soils are sandy loam, with pebbles on the surface and little organic matter. 2016, a year marked by the persistence of strong heat during a long and eternal summer without storms or rain, has resulted in large differences between alcoholic and phenolic maturity, which led to advance the harvest between fifteen and thirty days depending on the variety.

The grapes were harvested from October 3 to 7 at dawn and hand-picked into 15 kg boxes. They were immediately transferred to cold storage in order to preserve the aromas intact and avoid oxidation and spontaneous fermentation.
