Nothing adds more flavour to our dishes than a good dressing. You can use it with salads, meat or fish.  They are easy to make and you can prepare them in advance. Undoubtedly, they are the perfect complement for our cuisine and from Barcolobo we tell you the best ideas to prepare some of them with wine.

Red wine sauce

A sweet sauce made with red wine can be what you were looking for to give much more flavour to meat dishes. In this case, Barcolobo’s proposal is very simple.  All you need is a little stock, either meat or vegetable stock, a cup of wine, half an onion, butter and cornflour.

With the onion finely chopped, put it in a pot over medium heat with the butter for about five minutes.  Then add the wine to allow the alcohol to evaporate. Gradually add the stock mixture of your choice and season with salt and pepper. Once ready, you can fatten it with cornflour to taste.

Sauce with rosé wine

The sauce with rosé wine is perfect to accompany a good pasta dish, a soft meat or even some fish. In this case, we suggest a very simple one to make with the following ingredients: 6 pieces of dried chile de árbol, 250ml of wine, 500g of tomato, half a bar of piloncillo, half an onion and two cloves of garlic.

To make it, simply sauté the garlic and onion while boiling the blanched tomato in the rosé wine. This is then blended and the chilli and piloncillo are added, seasoned to taste and incorporated into your dishes.

Sauces with white wine

As happens when pairing dishes with wine, white wine is perfect to accompany fish. In this case, it can be made in the form of a sauce to give more flavour to steamed fish.

You will only need three products to make this simple sauce. Prepare two garlics to brown in plenty of oil, then add a sliced lemon and fry. Gradually add the wine until you reach the amount corresponding to two glasses. Finally, let it cook little by little until you notice a pleasant smell and turn off the heat.
